pernah tak gi makan kat Kamala's restaurant kat kg ampang MRR2???makan nya best.. terutama sayur-sayurannya..
any idea macammana nak buat sayuran indian ni.??

Tandoori Potatoes
6 large potatoes (1.7kg)
1/3 cup Tandoori paste
2 tbs oil
Preheat oven to moderate 180 celcius..brush a baking dish with oil..
Peel potatoes, cut in quarters..Combine Tandoori paste n oil; brush mixture over..
Leave potatoes to stand 15 min to absorb flavor.
Bake potatoes, turning occasionally, until red-brown n crisp on the outside n tender inside..
Salad: 3 zucchini, 2 medium ripe tomatoes, 1/2 cup mint leaves, 2 tbs lime juice.
Cut zucchini n tomato into small pieces, toss with shredded mint leaves n lime juice. Serve potatoes with salad, yoghurt n Nan bread, if liked.
POTATO CURRY WITH SESAME
4 large potatoes (1.3 kg)
1 tbs oil
1 ts cumin seed (jintan)
1 ts coriander seeds (ketumbar)
2 ts mustard seeds (biji sawi)
2 tbs sesame seeds
1/2 ts turmeric
1 ts fresh chopped chilli
salt + freshly ground black pepper
2 ts finely grated lemon rind
2 tbs lemon juice
Boil unpealed potatoes until tender..Cool, peel n chop.. (small/big)
Heat oil in a large heavy-based pan over medium heat..
Cook cumin, corainder n mustard seeds...
Add sesame seeds, stiring until golden..add turmeric, chilli, salt+pepper, potatoes, lemon rind n juice..
note:

paneer tu dibuat dari susukan?? susu jenis apa?? fresh or?? freshmilk can too ;)
that day i made - using 5 cup whole milk n 2 1/2 tbspoons of lemon jus..
the correct way is to use paneer cheese (indian made) :: saya ada perasan seorang penulis buku resepi wanita berasal dari india yg sangat popular dan terlaris di india... mak ai banyak betul buku resepi yg telah dia buat... tapi tak ingat namanya... saya tengok buku dia kat MPH ( mid valley )... berbakat sungguh wanita tu!! kagum!!

Indian Delights
Indian Cooking recipe may be added into this thread.Pakoras.
Delicious snaks, femous with Punjabis
Gram Flour( Tepung kacang Kuda ) 300g
1 tsp ground cumin(jintan..... tak tau nama in bahasa)
1 tsp cumin
1 biji bawang besar di cincang halus.(boleh di kurangkan)
Cili merah dan hijau 2 biji di cincang halus( boleh dikurangkan)
1/2 tsp baking soda
1/2 tsp garam. boleh ditambah
Shifts flour in a bowl. mix the ingredients together and biarkan selama 1/2 jam. Deep fry a tbsp of bartter in batches until golden brown.
Chutney mangga
Mango Chutney200g peeled and diced mango( not too ripe)
240g grated coconut
4 green chillies, cut into 1 cm lenghts
1/2 tspsalt
1 1/2 tbsp oil
1/2 tsp urad dhall
1/2 biji sawi
daun curry
1/4 asafoetida
coarsley grind mango, coconut, chille dan garam. Set aside.
fry urad dhall in oil over api yg perlahan until golden brown, add biji sawi and daun curry, goreng sampai biji sawi pops.
add asafoetida, mix and turn off heat.

Raita
1 biji timun2 biji tomato
1/2 biji bawang besar, thinly sliced. or di cincang
garam secukup rasa.
Timun, di buang kulit( not for lebanese cucumber) dan cut half and sliced. Tomato cut into wedges.
Mix all together. Serve with chapati or rice with curry.
Fish curry(dry version)
Good with chapatiWhite meat fish(cod or haddock) ortherwise, sardin in a can.
FIsh cut into eating bite. (lebih kurang 200 gm)
Bawang Besar 5, cut into wedges.
5cm Halia, chopped
Garlic, 5 cloves at least.
Tomato puree( only if using fresh fish)1tbs or more depending on your taste.
1 tsp cumin.
2tbs curry powder
oil or ghee for cooking
bit of water
Fry cumin and garlic and ginger sampai wangi dan sedikit kekuningan.
add bawang wedges.
masukkan curry powder.
Kacau sentisa.
masukkan sedikit air to wet onions.
add tomoto puree
masukkan ikan. kacau and cover. tambah garam. remove from heat when cooked and most fluid has evaporated.
