assalamualaikum,

Nak tumpang tanya, ada sesapa yg ada cara nak buat pasembor tak? Ada jumpa resepi online, tapi yg saya nak tau sgt tu, macam mana nak buat cucoq dia yg rangup tu. Yang mamak selalu dok buat tu. Bila makan krup krap. Kalau dah ada lam bod ni, mintak tolong habaq kat mana..

nie cat ambik resepi dr Puan  Norzailina  Nordin dr alaf 21

kat sini dia ada kasi 2 jenis cucur yang biasa ada lam rojak india nie..

ROJAK INDIA

Bahan Cucur (Keras):
1 1/2 cawan tepung gandum
1/2 camt serbuk penaik
3/4 camt garam
1/2 camt gula
155-165 ml air
1 labu bawang besar, dicincang halus
1 biji cili hijau, dibuang biji & dicincang halus
minyak untuk menggoreng  

Satukan tepung, serbuk penaik, garam, gula dan air secukupnya hingga menjadi doh. Tutup dengan tuala dan biar 1 jam. Gaul dengan bawang dan cili. Bentukkan 7.5 cm panjang, 2 cm lebar. Lumur jari dengan tepung semasa membentuk kerana adunan agak lembik. Goreng di dalam minyak panas hingga keperangan. Hiris sebelum digunakan.  

Bahan Sampingan:
8-10 keping tauhu, digoreng keemasan
450 g taugeh, dicelur 1 minit
300 g sengkuang, dihiris
2 biji timun, dihiris
4 biji kentang, direbus, dihiris & digoreng keperangan
4 biji telur, direbus & dihiris  

Bahan Cucur (Lembut):
1 1/3 cawan tepung gandum
1/4 camt serbuk penaik
1/2 camt serbuk kunyit
1 camt gula
1/4 camt garam
125 ml air
1 biji telur, dipukul

Campur semua bahan (kecuali telur) hingga menjadi adunan sebati. Biar selama 1 jam. Sebelum menggoreng cucur, tambah telur pada adunan dan kacau rata. Goreng cucur hingga keemasan kemudian hiris sebelum disajikan dengan bahan sampingan dan kuah.

Bahan Kuah:
900 g keledek
2.5 liter air
1 camb asam jawa
75 ml air
75 ml minyak
4 biji bawang merah, dicincang halus
3 biji cili merah, dibuang kulit & dikisar
1 1/2 camt serbuk cili
1/3 camt garam
6 camb gula
50 g kacang tanah, digoreng & dikisar halus
beberapa titik kicap hitam
beberapa titik cuka  

Rebus keledek hingga empuk. Kisar dengan air. Campur asam jawa dengan 75 ml air. Tapis dan ketepikan. Panaskan minyak, tumis bawang merah dan serbuk cili. Tuangkan keledek kisar bersama airnya. Seleps 3-5 minit, masukkan garam, gula dan air asam jawa. Kacau selalu di atas api perlahan. Kemudian masukkan kacang tanah, kicap pekat dam cuka. Masak lagi hingga terbit minyak.

PASEMBOR (INDIAN SALAD)

Ingredients:

100 g prawns
50 g cuttlefish
75 g self-raising flour
90 ml water
1/2 tsp salt
100 ml cooking oil
3 semi-hard bean curd (tau kua)
2 Tbsp cooking oil
2 potatoes
500ml water
2 eggs
500 ml water
50 g bean sprouts
1/2 cucumber
1/2 sweet turnip (bangkwang)
Ingredients for Sauce:
5 dried chillies
10 shallots
1 clove garlic
100 g sweet potatoes
500ml water
1 Tbsp tamarind pulp
250 ml water
2 Tbsp cooking oil
2 Tbsp sugar
1/2 tsp salt

Garnishing Ingredients:
1/2 cup roasted groundnuts
1 tsp roasted sesame seeds  Preparation of Ingredients:
Shell and devein the prawns.
Clean the cuttlefish.
Mix flour with water to form a thick batter. Add in the salt. Set aside.
Deep fry the semi-hard bean curd and cut each into 2.
Boil potatoes, skin and cut each into 4.
Prepare hard-boiled eggs and cut each into segments.
Clean and nip roots of bean sprouts. Blanch and drain.
Finely shred the cucumber.
Peel sweet turnip and finely shred.
Grind dried chillies, shallots and garlic to form a smooth spice paste.
Peel sweet potatoes. Boil until very soft and mash into a smooth paste.
Add water to tamarind pulp to extract tamarind juice. Strain and discard the seeds.
Pound the roasted groundnuts.

Ingredients for Sauce:
5 dried chillies
10 shallots
1 clove garlic
100 g sweet potatoes
500ml water
1 Tbsp tamarind pulp
250 ml water
2 Tbsp cooking oil
2 Tbsp sugar
1/2 tsp salt

Method:
Heat oil in a wok and fry the spice paste until fragrant. Add tamarind juice, sugar and salt. Then add in the mashed sweet potatoes and stir until sauce is well blended. Allow the sauce to simmer for 15 minutes. Set aside.
In a clean wok, heat oil for the prawn fritters. Mix prawns into batter. Spread 1 Tbsp of mixture on a spatula and ease into boiling oil. Remove when golden brown. Repeat until all the prawns are done.

Use the same method above for the cuttlefish.

Cut the prawn fritters and cuttlefish each into 2.

Place prawn fritters, cuttlefish, semi-hard bean curd, potatoes and hard-boiled eggs onto to serving plate. Garnish with bean sprouts, shredded cucumber and sweet turnip.

Pour the sauce over the salad and sprinkle the pounded groundnuts and roasted sesame seeds over it.

Cat, terima kasih byk2 for all the recipes :tq::tq:

semalam dah cuba dah, cucur keras tu guna resepi Puan Norzailina, x berapa menjadi sgt, dia jadi keras, tak rangup macam yg saya nak. mungkin saya silap teknik kot, nanti nak cuba lagi.

Kuahnya pulak saya gabungkan resepi PUan Norzailina dgn a few other yg jumpa kat net, mmg menjadi lah, sebijik macam yg dok makan kat penang! nanti saya tepekkan resepi ngn gambar yg saya buat. anak dok meragam ni

k Noor dah try resepi kuah pasembor Pn Zailina baru2 nih..husben kata  dah lulus

part cucur tuh..akak wat je cucur udang nipis2 buh kucai (cucur ni bila goreng nipis2 jd rangup ler..adunannya kena cair sket..baru leh jd nipis2...lepas goreng pastu potong kecil2...husben puji sedap..:bgrin:

alaaa sian akak..

byk kedai pasembor yg best kat penang, mostly jual waktu petang/mlm

dulu2 saya selalu pi makan dekat gerai mamak yg dok jual bwh pokok kat pdg kota tu,

yg dlm gambar ni, menurut website tu, dekat Gurney Drive, near Bali Bali seafood, kalau akak pernah ke Gurney drive, dia ni macam one long road, ada bykkkkkkkkkk gerai2 kat situ, so akak kena belek la satu2 sampai jumpa hehhe..tapi kena pi lewat petang/mlm tau

no prob fairy, kalau saya wat cucur kasik dia krap krup, masa bancuh adunan bater tu..pakai air ais, tak pon letak ais kiub lam adunan tu.

kalau kat sarawak nie...rojak nie..nama dia Rojak Tambi..feberet nie..but belum ada masa wat ujikaji ngan resepi nie :ting:

mak mertua cakap nak bagi cucur tuh krup krup, campur air kapur sikit....

saya kalau balik sana dok gila nk makan rojak jaa..
pasembor nie tak pandang dah..cewahh..
nie dah tgk gambor apa seme..rasanya balik minggu nie nk kena pi carik gak laa..
tak tahannn..!!
