Udang Masak Lemak Cili Api Rebung dan Pegaga

Masak lemak cili api memang favourite Nekcun. Rasanya kalau buka resto, Nekcun akan meniaga lauk masak lemak cili api pelbagai variasi. Masak lemak ni bila kita add on jenis ulaman atau sayuran, mesti naik rasa dia. Ummmphhh! Cubalah!

Bahan2

Udang (saiz ikut suka)
Rebung Hutan/Madu (cuci dan rebus sampai empuk)
Daun Pegaga
Kunyit Hidup
Cili Api
Bawang Merah
Santan
Asam Keping
Garam
Perasa (Kalau Suka)


Blend bawang merah, cili api dan kunyit hidup guna santan tambah air sikit. Nekcun pakai santan kotak Kara sebab dia pekat. Jadi boleh tambah air sikit. Jangan banyak sangat pasal nanti masuk udang, air keluar dari udang.

Panaskan periuk atau kuali, tuang santan yang dah blend dengan bahan2 tadi. Kacau sambil2 biar mendidih sikit, masukkan udang dan asam keping. Gaul2 sat, masuk rebung dengan pegaga. Masuk garam dan perasa. Gaul sat bila nampak udang dah masak dan kuah mendidih, tutup api. Siap.

*nota kaki: Nekcun kadang2 masak lemak cili api ni tak boh bawang. Kunyit hidup dgn cili api semata. Kadang2 boh bawang nak bagi naik rasa lagi kalau pakai seafood. Kadang2 Nekcun tak blend dengan santan. Nekcun tumbuk guna lesung, pastu tumis dgn minyak sikit. Ikutlah masing2 punya cara dan citarasa. Selamat mencuba!

Yezzzaa. Agak2 je kalau udang 1 kilo, rebung boh lah setengah kilo, pegaga seikat. Tapi Kalau tak suka banyak, kurangkan. Kunyit hidup, cili api pun sama. Kunyit tu sekadar memberi warna, jangan terlalu banyak. Tak sedap. Cili api pula ikut nak tahap kepedasan. Tak tahan pedas, boh sikit.
