Cheese Muffins [chempaka_ku]

I used to skip or substitute ingredients yg tak ada or suka...so it's up to you.....

Ingredients
55g butter
200g plain flour
2 tsp baking powder
2 tbsp sugar
1/4 tsp salt
1 tsp paprika
2 eggs
125ml (1/2 cup) milk
1 tsp dried thyme
55g mature Cheddar cheese, cut into 1 cm dice

Cara-cara:
1.  Preheat the oven to 190C.  
Thickly grease 9 deep muffin tins or use paper cases.

2.  Melt the butter and set aside.

3.  Sift together the flour, baking powder, sugar, salt and paprika.

4.  In another bowl, combine the eggs, milk, melted butter and thyme, and whisk to blend.

5.  Add the milk mixture to the dry ingredients and stir just until moistened, do not mix until smooth.

6.  Place a heaped spoonfulful of batter into the prepared cups.  
Drop a few pieces of cheese over each, then top with another spoonful of batter.  
For even baking, half-fill any empty muffin cups with water

Banana Coffee Muffin [shidaaziz]

INGREDIENTS:

Makes 12 large muffins

180g all-purpose flour
195g superfine flour
5 tsp baking powder or 2-1/2 tsp double action baking powder
1/2 tsp salt
210g castor sugar
3 large eggs, lightly beaten
250ml milk
4 tbsp instant coffee powder
130g butter, melted and cooled
3 ripe bananas, mashed
Coffee powder to dust muffin surface

   
METHOD:

1. Preheat oven at 200 degC. Line muffin tray with paper cups.
2. Sift flours, baking powder and salt into a mixing bowl. Add sugar into the flour mixture. Use a whisk to lightly blend the mixture.
3. In another mixing bowl, dissolve coffee powder in milk. Add egg and melted butter. Mix well.
4. Make a well in the middle of dry ingredients. Add the wet ingredients and mashed bananas. Mix just until all the flour is moistened. The batter should look lumpy. Do not overmix.
5. Divide batter into 12 muffin cups. Dust surface of muffins with a little coffee powder.
6. Reduce temperature to 180degC and bake muffins for 25-30 minutes or until well risen.
7. Transfer to wire racks to let cool.

CHOCOLATE CHIP MUFFINS [shidaaziz]

INGREDIENTS:

Makes 12 medium muffins

180g all-purpose flour

METHOD:

CHOCOLATE CHIP MUFFINS [Tillingtan]

Makes 10 muffins

115g mentega (room temperature)
70g caster sugar( I use 65g)
30g dark brown sugar
2 eggs, at room temp.215g plain flour
1 tsp baking powder
125ml susu
170 g plain choc chip.


1. Preheaet oven to 190 deg C. Grease a 10 muffin cups or use paper cases.
2. Cram butter until soft. Add both sugars and beat until light and fluffy. Beat in eggs, satu persatu.
3. Sift together the flour and baking powder, twice. FOld into the butter mixture, alternating with the milk.
4.Devide halfthe mixture between the muffins cups. Sprinkle several chocolate chips on top, then cover with a spoonful of the batter.
( I,  mixed the chips into the batter.) To ensure even baking, half-fill any empty cups with water.
5. Bake until lightly coloured, about 25 minutes. Let stand 5 minutes before turning out.


CHOCOLATE CHIPS MUFFIN [roylazim]

6(M-size) biji telur
150g chocolate chips
250g butter tanpa garam- dicairkan
50g serbuk koko - ayak
2 sudu kecil baking powder - ayak
200g gula aising - ayak
200g tepung gandum - ayak

Cara-cara
1. Masukkan telur ke dalam mangkuk. Pukul sampai berbuih. Tak payah guna mixer.
2. Kemudian masukkan bahan-bahan yang diayak. Kacau.
3. Masukkan butter. Masukkan chococolate chips. Kacau sampai sebati
4. Isikan adunan ke dalam cup muffin. 3/4 penuh.
5. Bakar dalam oven dengan suhu 170C selama 30 minit.


CHOCOLATE CHIPS MUFFIN [mushimushimushi]



Ingredients
125g chilled butter, cut into cubes
275g SR flour
115g brown sugar
115g choc chips or a block of dark chocolate and chop them into small pieces
1/2 tsp salt
100ml milk
1 egg
1 tsp vanilla essence

Method
1. Sift flour and salt together
2. Add egg and vanilla essence into the milk and mix them well, put aside
3. Mix butter into flour mixture, using your fingers, rub the butter into the flour till it resembles crumbs
4.Make a hole in the dry ingredients and pour the milk mixture (2) slowlyand using a fork, mix it gently till all the dry ingredients are moist.The batter should be lumpy and not smooth.
5. Scoop into muffin pan or cups and bake in a preheated oven at 175C for 20mins or so till cooked.


CHOHOLATE CHIPS MUFFIN [MAKLANG]

Bahan
250g tepung serbaguna
2 tsp baking powder
1/2 tsp soda bikarbonat
2 tbsp serbuk koko
175g gula kastor
150g coklat cip
250ml susu
90ml minyak sayur (75g mentega)
1 biji telur (L size)
1tsp esen vanila/ ekstrak vanila

Cara
Gaul tepung, baking powder, soda bikarbonat, gula dan serbuk koko dalam mangkuk besar.
Gaul rata minyak, susu, esen vanila dan telur dalam mangkuk lain.
Tuang bahan basah ke dalam bahan kering dan gaul rata.
Masukkan coklat cip dan gaul rata.
Tuang adunan dalam papercup dan tabur sedikit coklat cip di atas.
Bakar pada suhu 200C untuk 20 minit

Bahan2nya:
250 gram mentega tanpa garam
220 gram gula castor
310 gram susu sejat (evaporated milk)
3 biji telur
330 gram tepung naik sendiri
1 sudu teh baking powder
1 sudu makan rata serbuk koko
1 sudu teh pes coklat
100 gram coklat chip
Beberapa keping mangkuk kertas

Cara membuatnya :
1) Panaskan ketuhar 170 darjah celcius.
2) Ayak tepung dgn baking powder & serbuk koko.
3) Putar mentega & gula & pes coklat sehingga kembang.

TRIPLE CHOCOLATE MUFFINS [shidaaziz]

INGREDIENTS:

Makes 12 large muffins

6. Scope 1 tbsp of batter into each muffin cup. Place a dark chocolate chunk in the centre of each muffin. Cover chocolate chunks with the remaining batter.
7. Reduce temperature to 180degC and bake muffins for 25-30 minutes or until well risen.
8. Transfer to wire racks to let cool.


TRIPLES CHOCOLATE MUFFIN [hanieliza]

Bahan
110 g butter
210 g gula perang
3 biji telur
1 s/t esen vanilla
375 tepung gandum
2 s/t baking powder
2 s/b serbuk koko
300 ml fresh milk
100 g coklat chip digaulkan dgn 1 s/b tepung [untuk mengelakkan coklat tenggelam]

250 gm coklat cooking [potong dadu/kiub]

Cara.
1. Panaskan oven 180'C .
2. Pukul butter dan gula sehingga kembang dan ringan.
3. Masukkan telur satu persatu. Masukkan esen vanilla.
4. Ayakkan tepung, baking powder dan serbuk koko,
5. Masukan tepung dan susu berselang seli.
6. Masukkan coklat chip dan gaulkan rata.
7. Masukkan adunan dalam acuan kertas dan letakkan dalam tin/loyang muffin.
8. Masukkan coklat cooking yg dipotong dadu dalam adunan.
9. Bakar selama 20 minit.
10. BIla dah masak sejukkan dan hidangkan.

2. Masukkan telur satu persatu dan pukul lagi.
3. Masukkan tepung yg diayakkan diselangselikan dengan susu.
4. Kacau rata dan masukkan kedalam acuan kertas yg diletakkan dalam muffin tray.
4. Bakar dalam suhu 180'C selama 15 minit.
5. Sejukkan dan jika suka tuangkan coklat icing.

COKLAT ICING:
250 gm coklat masakan
1 cawan susu cair

Panaskan dalam mangkuk tahan panas yang diletakkan dalam kuali.

MUFFIN JAGUNG KEJU [RHB]

Bahan-bahan
3/4 cawan tepung naik sendiri
1/4 sudu kecil garam
1/2 cawan emping jagung
40g isi jagung manis AYAM BRAND
3/4 cawan hirisan keju
2 biji telur, dipukul
1/4 cawan susu
1/4 cawan minyak

Cara Penyediaan

1. Panaskan ketuhar pada suhu 180 C. Sapukan 8 acuan mufin
dengan minyak atau mentega.

2. Ayak tepung dengan garam kedalam mangkuk besar.
Gaulkan emping jagung , hirisan keju dan isi jagung .
Buatkan satu lubang ditengah.

3. Tuangkan telur, susu dan minyak yang telah dicampurkan ke
dalam lubang tadi.

4. Dengan menggunakan sudu kayu, gaulkan bahan-bahan tadi.
Letakkan bahan yang dicampurkan tadi kedalam acuan mufin dan
bakar selama 20 minit, atau sehingga berwarna kuning keemasan.
Keluarkan dari acuan dan hidangkan panas.

BLUEBERRY MUFFINS [RHB]



Bahan-bahannya: -
500 gm Marjerin Marvelosso
500 gm Lelemak Sayuran Qualitaste
200 gm gula kastor
200 gm gula perang
740 gm tepung gandum
5 biji telur
2 sudu besar serbuk penaik
2 sudu besar esen vanilla
500 gm susu segar
300 gm blueberry


Cara membuat: -
1.  Pukul marjerin Marvelloso lelemak sayuran Qualitaste dan gula sehingga sebati.
2.  Masukkan telur satu persatu. Campurkan esen vanilla.
3.  Masukkan serbuk penaik, tepung gandum dan kacau perlahan-lahan.
4.  Campurkan susu dan kemudian masukkan blueberry.


5. Bakar pada suhu 180c selama 20 minit.

BLUEBERRY MUFFIN II [hanieliza]



Bahan A
220 gm teppung gandum
100 gm gula kastor
1 s/b bakign powder
1/2 s/k garam

Bahan B
2 biji telur [pukul sedikit]
50 ml minyak jagung
50 ml butter cair
150 ml susu segar

Bahan C
200 gm blueberry filling/jam

Cara
1. Gaulkan semua bahan A dalam mangkuk.
2. Gaulkan bahan B dlam mangkuk berasingan.
3. Campurkan bahan B dalam mangkuk bahan A.
4. Panaskan oven 180'C selama 10 minit.
5. Masukkan adunan  separas 3/4 dalam mangkuk kertas muffin.
6. Sudukan blueberry filling/jam dalam adunan di dlaam mangkuk muffin.
7. Bakar muffin selama 25 - 30 minit.

STRAWBERRY & PASSIONFRUIT MUFFIN [chempaka_ku]



1 3/4 cup self-raising flour
pinch salt
1 tsp baking powder
1/2 tsp bicarbonate of soda
1/4 cup caster sugar
1 cup chopped fresh strawberries
1/2 cup canned (or fresh) passionfruit pulp
1 telur
3/4 cup milk
60g butter, melted

1.  Preheat oven to 210 degree celcius.
2.  Brush a 12-hole muffin tin dengan melted butter atau minyak.
3.  Ayak tepung, garam, baking powder, soda dan gula ke dalam bowl.  Masukkan chopped strawberries dan stir to combine.  Make a well in the centre.
4.  Add passionfruit pulp dan campuran telur dan susu.  Tuang melted butter ke dalam tepung sekaligus and lightly stir dengan garpu hingga just combined.
5.  Spoon mixture ke dalam tin tadi dan bakar 10-15 minit hingga golden brown.  
6.  Loosen muffins with a flat-bladed knife or spatula and sejukkan di wire rack.  Top with whipped cream and fresh strawberry dan sprinkle dengan icing sugar, kalau suka.

MUFFIN PISANG BERCIP COKLAT [zazizu]

1/2 cawan mentega (gue consider 1/2 buku mentega250g tu le)
1 cawan gula perang
1 biji telur
1 cawan pisang masak
1st soda penaik
2sb air panas
1 1/2 cawan tepung gandum serbaguna
1 1/2 st garam (sepatutnya kalau guna mentega bergaram tak payah ek????)
1/4 cawan choc. chip

pisang dipotong kasar-kasar dan choc. chip untuk menghias...

Cara membuatnya
1. Putar mentega + gula hingga gebu
2. Masukkan telur + pisang
3. bancuh soda penaik & air panas & tuang ke dalam adunan mentega
4. Masukkan tepung & garam & kaup balikkan hingga rata
5. Tambah cip coklat & kacau
6. Sudukan adunan kedalam acuan muffin
7. Bubuh 2 potongan pisang diatasnya & tabur choc. cip
8. bakar 180C @ 20 minit

Resepi ini memang mudah sangat. Kalau ada kenalan atau saudara -mara
tiba-tiba datang rumah ke, tak tau apa nak dihidangkan so cubalah buat
muffin nie.

Bahan - bahan

250 gm tepung naik sendiri
150gm gula castor
150gm minyak sayur
150gm susu segar
2 biji telur
1 biji oren

Cara membuatnya :
Campurkan gula dan telur dan pukul sampai kembang
Masukkan susu, minyak dan tepung. Pukul sebati.
Akhirnya parutkan kulit oren dan masukkan dalam adunan.
Kalau nak nampak cantik bolehlah taburkan buah-buahan campuran.

Selamat mencuba. Guarantee jadi punya.

Bahan
320 gm tepung naik sendiri
50 gm susu tepung
250 gm gula perang [brown sugar]
200 gm carrot diparut halus
220 ml minyak jagung
4 biji telur
1 s/teh esen vanilla
100 gm kismis
60 gm badam cincang

Cara
1. Panaskan oven apda suhu 180 selama 10 minit
2. Tepung diayakkan bersama dengan susu tepung.
3. Masukkan semua bahan lain dan gaulkan rata.
4. Masukkan adunan dalam papercup dan letakkan dalam muffin tray.
5. Bakar selama 25 minit pada suhu 180'C

CARROT CAKE MUFFIN [chempaka_ku]
Source:  Majalah Olive (March 2006)

100 gm light muscovado sugar
75 ml peanut oil 75ml (I used corn oil sebab tak ada peanut oil, British - groundnut oil)
50 gm unsalted, melted
3 eggs
2 tbsp milk
1 orange, zested
75 gm walnuts chopped
75 gm dates, finely chopped/kismis if you prefer
175 gm carrots, coarsely grated
175 gm self-raising flour
1 tsp baking powder
1/2 tsp ground cinnamon

CARA:
1. Panaskan oven 200 degree Celcius/fan 180 degree Celcius.
2. Satukan gula, melted butter, telur dan susu dan whisk hingga smooth (gunakan whisk tangan saja).  Masukkan orange zest, walnuts, dates dan carrots dan gaul.
3. Ayak bersama tepung, baking powder dan cinnamon, dan fold ke dalam campuran carrot tadi.  Jangan over-mix.
4. Bahagikan ke muffins pan yang dialas dengan papercups (10 lubang or 12 lubang).
5. Bakar selama 20 ke 25 minit atau sehingga masak (cucuk tengah-tengahnya dengan lidi seperti biasa).  Sejukkan dalam tin dan transfer ke wire rack hingga betul-betul sejuk.

Topping:  Buat cheese topping.

CORNBREAD MUFFIN [sue]

1/2 cwn butter
2/3 cwn gula castor
1/4 cwn madu
2 biji telur
1/2 tsp garam
1 1/2 cwn tepung gandum
3/4 cwn cornmeal  <--tp ari tu x bubuh pun sbb xde
1/2 tsp baking powder
1/2 cwn fresh milk
10oz frozen corn (dlm 3/4 package)

ambil bahan kering (tepung, cornmeal, baking) ayak 2x dan gaul sebati.
ambil bhn basah (telur, susu, gula, garam, madu & butter) kacau dgn whisker
sampai sebati. masukkan bhn kering dan kacau lagi.. (jgn terlebih pukul, cara penting
tuk buat muffin).. bile dah agak sebati & masukkan jagung. just kaup balik...
masukkan dlm muffin cup ...bakar 20-25' suhu 200'c....


SUNNY-SUNNY CORN MUFFIN [Kero_kero]



1 cup cornmeal
1 cup all-purpose flour
1/2 cup sugar
4 teaspoons baking powder
1 egg
1/2 teaspoon vanilla
1 cup milk(or 1 10-oz. can creamed corn)
1/4 cup vegetable oil

1. Mix dry ingredients together. Add egg, vanilla, milk, or creamed corn and egg.
2. Beat just until smooth, approximately 1 minute(please don't be silly and overmix).
3. Lastly add vegetable oil. Pour batter into a greased 8-inch square pan or greased muffin tin.
4. Bake at 350 degrees for approx 20-25 minutes.

BASIC MUFFIN [sue]

Bahan A
2 cwn tpg gandum
3 tsp baking powder
1/2 tsp garam
1/2 cwn gula
* tpg gandum & baking tu ayak 3 x

Bahan B
1 biji telur
3/4 cwn susu segar
1/4 cwn minyak jagung
* bhn b ni satukan, just pukul dgn whisker tuk sebatikan

1. Panaskan oven 175'C.  
2. Gaul rata bahan A (kalau ada kekacang/buah, gaul sekali, supaya tidak mendap). Lobangkan di tengah-tengah.
3. Tuangkan bahan B. Gaulkan sedikit dengan spatula plastic. (jgn pakai senduk/sudu jenis besi, ni petua). Satu lagi jgn terlalu lama menggaul. Ini pun penting untuk muffin tu naik tingi. Kalau ada tepug sikit2 tak gaul sangat pun tak apa..dah siap isi dalam muffin cup alas dlm muffin try.. make sure nak masukkan dalam oven baru letak dalam paper cup.


BASIC MUFFIN [soulha]



Bahan-bahannya:

250g tepung naik sendiri
150g gula
150g/175ml susu segar /
150g / 175 ml minyak sayuran / minyak masak
2 biji telur
perasa - terserah anda.kalau anda nak perasa oren, boleh parut dua biji kulit oren atau letaklah sedikit perasa oren, atau keladi,dll.

Cara-caranya:
1. Pukul telur dan gula sampai kembang
2. Masukkan susu, minyak dan tepung, kacau sebati
3. Letakkan perasa dan kacau sebati
4. Masukkan adunan ke dalam acuan muffin atau acuan kek kertas dan bakar selama 10-15 minit dngn suhu 150 darjah.

Nota:
- semasa memulakan bancuhan mufin, bolehlah panaskan oven terlebih dahulu lebih kurang 10 minit
- saya guna gula kastor
- telur yg saya guna jenis besar
- susu tepung anak saya bancuh dengan air masak
- saya pukul telur + gula hingga kembang (berwarna putih)
-saya menggunakan hand mixer drp vol 1 dan beransur ke vol 5 dan perlahan2 menurunkan vol ikut turutan juga semasa memukul telur + gula
- kemudian, saya gunakan vol. 1 semasa memasukkan susu dan masukkan minyak dan putar sebati
- kemudian, saya masukkan tepung sedikit demi sedikit ke dalam adunan tadi dengan menggunakan pemukul telur, tanpa memukul sebaliknya mengacau perlahan. Tujuan guna pemukul telur tu untuk mengelakkan tepung berketul2. Jika guna sudip plastik tu, tepung mudah berketul2. Pastikan mengacau tepung ni tak melebihi 15 saat seperti saranan Diana.

CHOCOLATE CHEESE MUFFIN [chempaka_ku]

1 3-ounce cream cheese, dilembutkan
2 tbsp granulated sugar
1 kuning telur

1 1/2 C tepung biasa
1/2 C granulated sugar
1/4 C cocoa
2 tsp baking powder
1/4 tsp garam

1 biji telur
3/4 C susu segar
1/4 C minyak
1/2 C chopped walnuts

2 tsp icing sugar untuk ayak di atasnya

1.  Grease 2 1/2 inci muffin pan 12 lobang atau line dengan paper cups.
2.  Pukul cream cheese, 2 tbsp gula dan kuning telur hingga tergaul rata.  Ketepikan.
3.  Gaul tepung, 1/2 C gula, cocoa, baking powder dan garam di mangkuk yang lain.  Buat lobang ditengahknya dan ketepikan.
4.  Campur telur, susu dan minyak di mangkuk yang lain.  Masukkan campuran ini ke bahan tepung tadi sekaligus.  Gaul, batternya nampak lumpy.  Gaul walnuts.
5.  Sudukan setengah dari batter tadi ke muffin cups (kira-kira 1 tbsp satu cup).  Masukkan kira-kira 1 1/2 tsp campuran cream cheese di atas batter ini dan sudukan adunan selebihnya; 3/4 full setiap cup.
6.  Bakar 400 F atau 200 Celcius selama 20 minit atau atasnya kering.  Cool di dalam pan selama 5 minit.  Icing sugar boleh diayak diatasnya.
