Bahan A
300 g tepung gandum
1 s/k baking powder
1/2 s/k baking soda
1 s/k serbuk kayu manis [cinnamon]
sikit garam
190 g green apple dadu kecil
2 s/b kismis
2 s/b coklat chips
115 g butter ( or margarine ) kakliza used butter
100 g gula kastor
100 g gula perang
3 biji telur
1 s/k vanilla
Cara
1. Pukulkan butter , gula, dan telur sehingga sebati. Masukkan esen vanilla.
2. Ayakkan tepung, baking powder, soda bikarbonat dan serbuk kayu manis.
3. Masukkan epal dadu, kismis dan coklat chips. Gaulkan rata.
4. Masukkan dalam adunan butter dan gaulkan dengan senduk kayu.
5. Sudukan adunan dalam papercup dan bakar dalam pre-heat oven pada suhu 180'C selama 25 minit.
6. sejukkan dan hiaskan mengikut kkesukaan sendiri.
TIPS dari Zack: To make muffins that have fruits in it, make sure you add the diced/sliced fruits into the dry ingredients and mix it well until all the fruits are covered in flour. This will make sure the fruits are distributed evenly in the muffins when baked.
4. Make a well in the bowl containing the dry ingredients and pour in the wet mixture. Fold as gently,quickly and as even as possible. TIPS: In order to make great fluffy muffins, DON'T OVERMIX your dry ingredients and your wet ingredients. After both are mixed, the batter should be lumpy and NOT RUNNY .
5. Scoop in a prepared muffin pan, greased at the bottom side with butter/margarine. To scoop out batter, use an ice-cream scoop as a tool .
6. Bake in a preheated oven of 180 degress C for 20-25 minutes. Once baked take out from muffin pan as soon as possible, and leave to cool on wire rack. This is to avoid the muffins from getting soggy when cooled.
Serve warm

1 cawan air panas
1 s/k esen vanilla
Cara.
1. Panaskan kukusan dan lapikkan acuan muffin dengan paper-cup
1. Ayakkan tepung, serbuk koko dan soda bikarbonate.
2. Gaulkan semua bahan A supaya sebati.
3. Masukkan bahan B dan gaulkan rata subaya sebati.
4. Masukkan adunan dalam paper-cup dan kukuskan selama 25 minit dengan api yg sederhana.
5. Angkat dan hidangkan.

180 gm kek buah [ peroikan]
60 gm carrot [ parut/sagat]
150 gm tepung superfine
20 gm susu tepung
1 s/k baking powder
60 gm gula kastor
Bahan B
2 biji telur
1 s/k essen vanilla
110 ml minyak
Cara
1. Panaskan kukusan. Sediakan mangkuk muffin.
2. Gaul rata semua bahan A.
3. Masukkan bahan B dan gaulkan rata.
4. Masukkan adunan dalam acuan kertas muffin dan kukuskan selama 25 minit dengan api sederhana.
5. Sejukkan dan boleh dihiaskan mengikut suka hati.

BANANA MUFFIN [CikKiahAbd]
Ingredients:
190 g all-purpose flour
3 g baking soda
7 g baking powder
3 g salt
3 bananas, mashed ( I used pisang montel yg brand Del Monte, panjang dlm 10-12cm )
150 g white sugar ( I changed it to brown sugar instead..and i think it tasted better )
1 egg, lightly beaten
75 g butter, melted
(crumb topping)
75 g packed brown sugar
15 g all-purpose flour
0.3 g ground cinnamon
15 g butter
How to make:
1. Sift dry ingredients into a bowl. In another bowl, mix mashed bananas, egg and melted butter.
2. Combine the wet ingredients to the dy ingredients.
TIP: I learned this trick from a website on how to mix without OVER-MIXING when you want to combine liquids to dry ingredients. Using the largest whisk, scooped up the batter in a big circular motion and tapped the whisk on the side of the bowl to drop the batter back into the bowl. Repeat while turning the bowl 90 degrees each time until the batter is almost homogenous. This technique will make the batter more airy and will produce big, high muffins. ( Thanks Lynn, for a great tip! )
3. Sprinkle crumb toppings on top of each muffins and bake in a preheated oven of 180 Deg. for 20-25 minutes or until inserted toothpick comes out clean.
4. Serve warm or chilled topped with whipped cream.
BANANA MUFFIN [juliajie80]

1 1/2 cups mashed bananas
2/3 cup sunflower seed oil
1 egg, beaten
1 1/2 teaspoons vanilla extract
2 cups all-purpose flour
1/2 cup white sugar
2 tablespoons unsweetened cocoa powder
1 tablespoon baking powder
1/2 teaspoon salt
1 cup semisweet chocolate chips
Method:
Preheat oven to 425 degrees F (220 degrees C). Lightly grease a 12-cup muffin tin.
In a medium bowl blend the banana, oil, egg and vanilla together.
In a large bowl, combine the flour, sugar, cocoa, baking powder and salt. Stir in the banana mixture until just blended. Fold in the chocolate chips. Spoon the batter into the prepared muffin tin, filling 3/4 full.
Bake in the preheated oven for 15 to 20 minutes. Remove muffins to a wire rack to cool completely.

2. Cairkan mentega dalam susu suam.
3. Kacau semua bahan A supaya sebati.
4. Masukkan kedalam bahan B. Kacau rata.
5. Masukkan bahan C dan gaulkan supaya sebati.
6. Susunkan acuan kertas paling ekcil [acuan almond london ]dalam petitin yg paling kecil.
7. Masukkan adunan dalam acuan kertas.
8. Kukuskan selama 15 minit dengan api sederhana.
9. Sejukkan dan hidangkan

MUFFIN PANDAN [zaiima]

200g all-purpose flour
1-1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
120g sugar
200ml coconut milk
100ml corn oil
2 eggs
5 pandan leaves
1/4 tsp pandan essence
Method
1. Preheat oven at 190 degC. Line muffin tray with paper cups.
2. Blend pandan leaves with half of the coconut milk. Strain to discard pulp.
3. Sift flour, baking powder, baking soda and salt into a mixing bowl. Add sugar into the flour mixture.
Use a whisk to lightly blend the mixture.
4. Make a well in the middle. Add pandan juice of Step 1 and the remaining ingredients.
FOLD to incorporate dry ingredients into wet ingredients. The batter should be a bit lumpy.
DO NOT BEAT or STIR. This will over mix the batter.
5. Divide batter into 12 muffin cups. Bake in preheated oven for 20 minutes.
6. Bake at upper shelf of oven until muffins are well risen. Transfer to middle shelf ,if required, when
the surface starts to become burnt. Test muffins with skewer to make sure they are cooked.
7.Transfer to wire racks to let cool.
MUFFIN PANDAN II [maisya]

Bahan-bahan
1 1/2 cawan tepung gandum

1/2 sudu kecil soda bicarb
1/2 sudu kecil baking powder
1/2 cawan minyak masak
1 cawan santan pekat (kurangkan sedikit kalau santan cair)
1 sudu besar Andrews Liver Salt/antacid or di malaysia-ENO
sedikit perasa Pandan + Warna hijau
Cara-cara
1. Campurkan bahan kering (tepung, gula, soda bicarb, baking powder) kedalam satu bekas.
2. Campurkan bahan basah (santan, minyak, colour, perasa pandan) kedalam satu bekas.
3. Masukkan (2) ke dalam (1), sambil dikacau dengan garpu.
4. Akhir sekali, ayakkan Andrew Liver Salt/ ENO. Kacau dengan garpu, biar sebati, tapi jangan terlebih kacau.
rehatkan 5 min.( cukup masa untuk ENO bertindak mengngeluarkan bubble)- mungkin tak berapa nampak, tapi mixture akan kurang likatnya.
5. Masukkan kedalam bekas muffin, bakar selama 30 min, 160 deg C. Untuk perasa lain bole try contoh di bawah.
OPTION1: @Banana Muffin@: 2 biji pisang size kecil, 3/4 cawan susu soya
OPTION2: @Apple Muffin@: 4 sudu besar Bramley apple source, 3/4 cawan susu soya

Segenggam kacang tanah yg telah digoreng tanpa minyak (blend/ditumbuk kasar)
1/2 biji limau sunkist (ambil jus dan kulitnya-cincang halus)
1sudu kecil soda bikarbonat
1/2 sudu kecil serbuk penaik
1/2 sudu kecil serbuk kulit kayu manis
1sudu kecil esen vanila
sedikit garam
kismis atau ceri untuk hiasan (jika suka)
Cara2:
- Campurkan gandum,soda bikarbonat,serbuk penaik,serbuk kulit kayu manis, dan garam dalam satu bekas.
- Di dalam satu bekas yg lain pula campurkan gula,minyak dan telur kemudian dipukul menggunakan whisker.Setelah agak sebati masukkan esen vanila,kulit dan juga jus limau kemudian kacau lagi (agak2 gula tu dah hancur skit)
- Masukkan adunan gandum tadi ke dalam adunan telur dan digaul rata.
- Masukkan kacang tanah dan epal kemudian gaul hingga sebati.
- Setelah sebati boleh la dimasukkan ke dalam cawan muffin dan dibakar dlm ketuhar selama 12-15 minit dgn suhu 180 celcius |

Ingredients
1 3/4 cup plain flour
1 tsp bicarbonate soda
3/4 cup brown sugar (original is castor sugar)
1/4 cup cocoa powder
100g butter, melted
1 egg
3/4 cup plain yoghurt
1/2 cup chocolate milk (original is regular white milk)
1/2 tsp vanilla essence
1/2 cup chocolate chips
Method
1. Preheat oven at 180C
2. Sieve flour, bicarbonate soda and cocoa powder together then stir in sugar
3. Beat egg and vanilla essence together, add in all the wet ingredients to into flour mixture
4. Fold together using a fork until the flour is dampened, but not smooth
5. Spoon mixture evenly into lined or greased muffin tray
6. Bake for 20 mins or until the until skewer comes out clean

9 oz self raising flour
1 tsp bicarbonate of soda
half tsp salt
5 tbsp cocoa powder
4 oz chocolate chips, dark n white (extra pun takpe)
4 to 5 oz brown sugar (kalau banyak choc chips, kurang kan la gula...)
260 mls milk (full fat la, but to appease your guilt, you may use skimmed....BOOOOOOOOO!!!)
90 mls vegetable oil (or sunflower or canola or soya..)

Method :
Preheat oven at 160C atau 325F.
Sift flour, bicarb n cocoa into a bowl, add salt n choc chips n sugar.
Add milk, oil, vanilla n egg to dry ingredients.
Mix, do not over beat or muffins will be heavy.
Bakefor 8-10 minutes for mini muffins or 12-15 minutes for large muffins.
Will make 12 large muffins or about 40-50 mini muffins.
DOUBLE CHOCOLATE MUFFIN II [feathers]
2 cups flour
2/3 cup baking cocoa
1/2 cup sugar
2 teaspoons baking soda, pressed through a sieve to remove lumps
1/2 teaspoon salt
1 cup semisweet chocolate chips (miniatures work great!), divided
1 1/3 cups milk
1/3 cup vegetable oil
2 large eggs
1 teaspoon vanilla
Preheat oven to 400癋.
Coat muffin tins with non-stick cooking spray.
In a large bowl, combine the dry ingredients.
Stir in 1/2 cup chocolate chips.
In a separate bowl, combine the liquid ingredients and whisk until smooth.
Fold into the dry ingredients just until moistened.
Don't overmix.
Scoop the batter evenly into the prepared pan.
Sprinkle with the remaining chocolate chips.
Bake at 400癋. for 20-22 minutes or until a toothpick inserted in the center comes out clean.
Cool on a wire rack before removing from the pan.

OREO MUFFIN [MAKLANG]

1 3/4 cup all-purpose flour
1/4 cup sugar
1 tablespoon baking powder
1/3 cup butter or margarine
1 cup milk
1 egg
16 OREO chocolate sandwich cookies, coarsely chopped
50g white chocolate chopped
50g dark chocolate chopped
Mix flour, sugar and baking powder in medium bowl. Cut in the butter until mixture resembles breadcrumbs. Blend milk and egg in a small bowl. Stir into flour mixture. Gently stir in chopped cookies and chopped white/ dark chocolate. Spoon batter into greased or paper-lined muffin trays.
Sprinkle with more chopped chocolates.
Bake for 15-20minutes or until toothpick inserted near centres comes out clean. Cool in pan on wire rack for 5 minutes. Remove from pan, cool slightly |

Ingredients :
50g cooked chicken meat, shredded
1/4 tsp pepper (Belle akan guna black pepper sbb tak suka white pepper)
1/2 tsp chicken stock granules
1/2 tsp salt
160ml UHT milk
2 eggs
90g butter, melt
25g chives, chop coarsely
25 g carrots, grate
Sift :
100 g plain flour
150 g self-raising flour
1 tsp baking powder
1/4 tsp bicarbonate of soda
Method :
Preheat oven to 180 deg C. Lightly grease muffin pans or patty tins with corn oil. Combine the sifted ingredients with the pepper, chicken stock and salt.
Beat the eggs lightly and mix in milk and melted butter. Pour in the flour mixture. Mix lightly but well, then add in chives, carrots and chicken meat.
Spoon batter into prepared muffin pans until 3/4 full. Bake in preheated oven for 20-25 minutes or until well-risen. |

1 3/4 cups self-raising flour
2 tbsps caster sugar (ita masukkan dlm egg mixture)
1 tsp baking powder
1 cup grated cheddar cheese
1/2 cup chopped ham (ita guna sausages)
1 egg, lightly beaten (tp ita masukkan terus sebijik dlm susu, gula & minyak...pastu kacau2 ngan garpu)
3/4 cup milk
1/3 cup melted butter (me guna minyak jagung jer sbb as usual malas nak cairkan butter )
1. Preheat oven to 200C (m/wave oven 180C). Brush oil into bottoms only of twelve 6 cm muffin tins.
2. Sift flour, sugar & baking powder in a bowl and stir in cheese & ham.
3. In a small bowl combine egg, milk and melted butter and mix well.
4. Add liquids all at once to flour mixture.
5. Stir gently with a fork until dry ingredients are just moistened. Batter should look quite lumpy.
6. Spoon batter into each muffin tin, filling 2/3 full. Bake 20-25 minutes until golden brown.
7. Loosen muffins with a spatula and remove to a wire rack. Serve warm. |

Bahan-bahan
1 1/2 cawan tepung
2 sudu besar koko powder
1 cawan gula (saya guna 1/2 cawan je)
3/4 cawan minyak
1/4 cawan air sejuk
2 bijik telur
1 tsp baking powder
1 tsp choc emulco
1/2 tsp garam
Cara
1. Campurkan tepung, koko powder, baking powder dan garam. gaul rata.
2. Dalam bekas lain campur telur, gula, minyak, air sejuk n choc emulco dan gaul guna whisker sampai sebati.
3. Masukkan adunan telur n minyak tadi dalam adunan tepung. gaul ala kadar jer..
4. Sudukan dalam paper cup dan bakar pada suhu 170'c selama 20-30 minit (saya boh suhu 200'C 15 minit jer)

BANANA DATE MUFFIN [feathers]
10 oz self raising flour, sifted
1 tsp bicarbonate of soda, sifted
1/2 (half) tsp salt
4 oz brown sugar
3 large bananas, mashed
90 mls vegetable oil
60 mls milk
1 egga handful of dates, chopped
METHOD
1. mix everything together.
2. Batter should be lumpy. Kalau batter smooth sangat,the muffin will be heavy.
3. Bake in oven 160 degrees C atau 325 degrees F for 15 mins for large muffins (makes 12) or 10 mins for small muffins (makes approx 50)
NOTE:
1.Fea selalu use the large bananas mcm Del Monte, atau thai bananas. The riper the bananas, the better. Kalau pakai pisang yang fresh sangat, the banana smell and taste tu kurang.
2. Kurma can be substitute with choc chips/walnuts/kismis (3-4 oz ) |

DARK CHOCOLATE MUFFIN [nhuda]

5 oz-(approx. 143gm) dark chocolate, chopped
1/2 cup butter
2 cups all purpose flour
1/2 cup brown sugar
2 tsp baking powder
1/2 tsp salt
2 large eggs
2/3 cup buttermilk
1 tsp vanilla extract
1 cup chocolate chunks, dark or semisweet
Preheat oven to 350F.
Line a 12-cup muffin tin with paper liners.
In a small, microwave-safe bowl, melt together the butter and chopped dark chocolate. Heat in 30 second intervals, stirring frequently until smooth. Set aside to cool slightly.
In a large mixing bowl, whisk together flour, sugar, baking powder and salt. Make a well in the center and add eggs, buttermilk and vanilla extract. Whisk until almost smooth. Stir in melted chocolate mixture, making sure the batter is smooth and the chocolate is evenly incorporated, followed by chocolate chips.
Bake for about 18-22 minutes, or until a tester inserted into the center comes out clean.
Cool muffins on a wire rack before serving. May be served at room temperature or slightly warmed. Store in an airtight container if not eating right away.
NOTE:
1. buttermilk saya substitute dgn fresh milk yg diperah ngan asam limau
2. gandum saya guna 1 cup gandum biasa + 1 cup self-raising flour. ni kes baru perasan gandum habis..then saya kurangkan baking powder to 1 tsp
3. garam saya tak taruk.

MOCHA CHOCOLATE CHIPS MUFFIN [maisya]

1/4 tsp salt
3/4 cup semi-sweet chocolate chips, and more for sprinkling on top
3 Tbsp good quality cocoa powder
3/4 cup sugar
3/4 cup milk
1/4 cup strong coffee, room temperature
1/3 cup, plus 2 Tbsp vegetable oil
1 egg
1 tsp vanilla extract
Sift all dry ingredients together in a bowl. In a large measuring cup, mix all wet ingredients. Add the wet ingredients to the dry and stir ONLY till moistened. It's very important not to over-mix quick breads, such as muffins, or they can get very tough.
Line a muffin tin with paper liners and fill with batter. Sprinkle some of the remaining chocolate chips and then baked for 18 minutes in a 400 degree F oven. |
