Sharing info on CHEESE which is used most in our local food operators & bakery (melalui Ceramah Ust Badrul Amin) last Sunday @ UIA :
Susu memerlukan sejenis bahan yg diperolehi dari perut mamalia (lembu & khinzir) utk membolehkan ianya 'beku' - separa 'beku' dipanggil keju manakala 'beku' jadi 'whey powder'. Both ingredients are used widely in our daily food intake - pizza(s), cheese cakes, tart cheese or anything with cheese, cookies etc.
The big Q - even if bahan dari perut 'lembu' being used to make the cheese - how do we know 'lembu' tu disembelih mengikut syariah Islam? How do we know the same 'lembu' being used in our food intake?
Unless, we (muslim) produced our own cheese - is there any in our local market? Pls share.
Conclusion - even tho memang payah, cuz kena explain panjang-lebar ngan my kids, InsyaAllah, Pizza Hut, Domino, anything contains CHEESE - gonna be NO NO from now on.This is not boikot but - menjaga akidah kita, semampu kita, within our control/power kerana ALLAH melalui penjagaan makanan kita yg akan menjadi darah daging.

Talking about cheese, as said by ustaz, memang betullah untuk bekukan cheese tu, they need bahan dari perut khinzir atau lembu. Masa di States dulu, I studied Human Nutrition and my Jewish Prof. memang every now and then masa tu kept reminding me to check cheese yang I beli untuk class commercial food production, cos dia jewish pun tak makan khinzir, I mesti pastikan dari ingredients cheese tu yg bahan pembekunya must be pepsinogen [lembu] dan bukan rennet[khinzir] . Kalau di States, 70% cheese guna rennet ( ni masa I check dulu, hundred years ago, hehe, taulah skarang).

arwen, camni, i think the best way is to email perfect italiano, jangan explain apa2 kat mereka, tapi tanya apa sebenarnya enzymes dalam shredded parmesan tu.
tanya lah, pepsinogen or rennet? & if rennet, apa source nya.
katakan PI replied your email & cakap enzymes dia from calf rennet, balas balik email dia, tanya lah dia ada cert from ifanca tak. |

Mcm jugak kraft slice cheese tu. Ingatkan halal. Tapi bila baca, ada animal rennet lak. Tak kira calf or p*g. Kkdg bila kita tgk, certain cheeseblock tu halal, umpamanye, bega or coon kat Aussie ni, tapi bila kita tgk yg slices pulak ada yg halal dan ada yg tidak. Akhir kata, sebelum beli baik kita baca. Walaupun pengeluar tu sama, or brand tu sama, tak semestinye jenis2 cheese yg mereka produce tu semuanye halal. |

yg kraft slices kat sini rasanya ada tanda halal from mana tah (tak ingat aust or nz ke mana tah).
bega ada cert from aust (afica ke?). i buy bega sebab cheaper.
kalau brand supermarket macam jusco selection or first choice (normally kat giant) mmg a lot cheaper, tp belek2 takde langsung tanda halal. so, letak balik. |

Kraft slices I tak beli sbb tak de halal certified kat sini. So rasa was-was. Bega block n coon block mmg ada certified. Tapi tak ingat samada coon slices or bega slices yg mana satu ada halal certified. I selalu beli yg block sbb murah. Kat rumah I ni cheese cepat habis. So bila beli I tgk yg mana ada special. Utk dptkan slices yg nipis I pakai potato peeleram utk slice kan cheese2 ni.
Bega block

ini ambil dari buku masak baking and pastry pasal chocolate....
The extraction and processing of chocolate from cacao beans is a lengthy and complex process. The first stage involves crushing the kernels into a paste; at this point it is completely unsweetened and is called chocolate liquor. The liqour is then further ground to give it a smoother, finer texture........... |

Mengikut Yahoo answers...
Q : Does chocolate liquor really contain any kinds of alchohol???
A : No...and yes.
It all depends on the context.
When making chocolate from cocoa beans, the nibs are removed from the bean shell and ground. This liquefies them and it becomes "chocolate liquor"
http://en.wikipedia.org/wiki/Chocolate#C...
In this context, there is no alcohol at all involved.
When talking about alcoholic drinks, "chocolate liquor" is just a generalization of any liquor that contains or tastes like chocolate. It could be a liqueur like Godiva or Creme De Cacao. It could be a flavored vodka like Van Gough. It could be a blend of anything chocolate and any spirit.
Nak menyentuh sket pasal evaporated alcohol in food... Tempat2 yg kena benda2 yg najis kalau eveporated sblm kita sempat cuci masih lagi consider najis... no not halal in food even kalau dah evap... |

maybe from the discussion below, kita boleh fahamkan, mana2 masakan yang guna alcohol, the alcohol is still there in the food....... source: http://whatscookingamerica.net/Q-A/AlcoholEvap.htm

Alcohol Evaporation in Cooking and Baking
Question:
I baked a rum cake - 1/2 cup of rum went into the batter then was baked for 1 hour - glaze was put on top using 1/2 cup rum 1/4 water and 1 cup sugar. Will the cake have active alcohol presents or does cooking the rum take out the alcohol leaving only the rum flavor ?? - Sarah Peters (3/16/00)
Question:
When using alcohol in a recipe, for example a sauce, how long does it take or how can you be sure that you have cooked off all the alcohol and are only leaving the flavor of the alcohol behind without any actual alcohol.
I made a sauce for chicken last night, which had wine in it, and today I suspect that perhaps I didn't cook off all the wine in the sauce. I didn't drink any alcohol last night, so that was the only source of alcohol if I have any in my system today. I don't feel like I have a hangover, but I am extremely tired, as if I had been drinking. Any guidelines for working with alcohol and how long to cook something to ensure that all the alcohol cooks off? - Kristi

Maybe I misunderstand the position of halal and haram. Tapi dari segi fiqah benda yg dah terkena najis kena disucikan dulu mengikut syarak before you can use it. Tak pelah. Nanti saya consult ustaz tpt saya belajar but personally (in my opinion) kalau setakat guna alasan alcohol tu dah evaporated from the food to which it was added... masih belum halal makanan tu. Alasan utk sedapkan hati je. Kalau tak de benda tu, takkan dilabel kena mention...
Yg pasti ramai dah menyimpang... Kalau tak jauh dekat... Tapi masih tidak mengikut landasan agama.
Maaf kalau ada yg terganggu dgn jawapan saya. |
