ANEKA KEK LOBAK [CARROT CAKE]

Ello kengkawan..
Hari minggu hari tu my friend datang bawa carrot cake...dalam cake tu ada walnut, kismis...topping nya pula diletakkan creamy cheese..emm...sedapnya..makan kek tu 1/4 pun rasa tak puas...so, gue pun cari le buku-buku masakan nak mencari resipi tu..ada le terjumpa satu resipi ni..namanya KEK LOBAK BERKEJU...tapi  yang peliknya tak de tambah keju pun...lagi satu, camno nak buat topping cheese tu?

Eish...satu lagi kemushkilan...dalam resipi yang gue dapat tu...ada dimasukkan nenas yang dikisar...camno tu ha...!!!

Wokey le kengkawan...kalau ada sesiapa yang dapat share resipi nak buat carrot cake ...PLEASE...juga Creame Cheese topping

Chocolate Carrot Cake

my favourite carrot cake.......

Ingredients:
1 1/2 cups self-raising flour
1/4 cup cocoa powder
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/2 cup chopped pecans
1/2 cup sultanas
1/3 cup shredded coconut or dessicated kalau shredded tidak ada.
3 eggs
3/4 cup brown sugar
1/2 cup oil
125g milk melts/chocolated, melted
3 cups grated carrot

Icing:
250g cream cheese, at room temp
125g milk melts/chocolate, melted
2 cups icing sugar, sifted
extra pecans
extra milk melts/chocolate, melted

Cara:
1.  Sift flour, cocoa powder and spices into a large bowl.  Stir in pecans, sultanas and coconut.
2.  Whisk eggs, sugar and oil together.  Blend in melted chocolate until mixture is smooth.  Fold into flour mixture with carrot.
3.  Pour into a greased and lined, 23cm x 32cm slab tin.  Bake in 160C for 45 minutes or until cooked when tested.  Cool in tin for 10 minutes.  Turn out onto a wire rack to cool completely.

Cara buat icing:
Beat cream cheese until creamy.  Blend in melted chocolate.  Gradually mix in icing sugar until smooth.  Spread over cold cake.  Decorate with pecans, drizzled with extra melted chocolate.

ha..ha..ha..kalau untuk k. liza malu le coz..k.liza ni pandai memasak..nanti kang terdengar komen dari k. liza...terlebih serbuk kayu manis...pastikan cream cheese dalam suhu bilik, baru tak berketul...carrot tu, guna parut yang lebih besar, coz tak terasa carrot, halus sangat...

Anyway..thanks semua...dah selesai satu masalah....

a'kum...ramai rupanya yg suker kek carot ni. esme tau sebab mak esme memang buat kek. mama esme ada kedai kek masa kat perak dulu now dah dok kl takder la kedai dah. buat kat umah jer. memang tak dinafikan kek carot ni mendapat sambutan hangat, eee  wahh! mama esme dapat banyak sgt order sampai kesian tgk dia buat sorang2...esme lak nak tolong boleh tolong kacau jer la hehe. ari tu ada satu family tu order 6 bijik sekaligus..katanya nak kasi pada mak lang, mak usu, mak andak suma2 la...kita org dok gelak je la kebetulan mmg jiran rapat kann..

hmm, sekilo mmg mama jual RM 40 kalau barang2 dia naik tu, kenalah naikkan juga...nak amik modal balik kan...

anyhow, saper2 nak oder bleh la calling calling esme kay....

Esme..bagus le macam tu..apa kata post kan kat sini resipinya..sekarang ni kita ada 3 versi kek carrot..tambah lagi satu...cukup empat...

dah cuba resepi ni dr buku baking, sedap dah buat 2 kali bg kat kawan..siap anaknya suruh maknya buat jugak kek cam acik Noor bagi..:bgrin:




CLASSIC CARROT CAKE

Makes 12 bars
Preparation time: 10 minutes
Cooking time: 20-25 minutes

Ingredients

125 g self raising flour
pinch of salt
1 tsp ground cinnamon
1 tsp baking powder
100 g soft brown sugar
2 eggs } beaten
100 ml sunflower oil
125 g carrot, peeled and finely grated
25 g desiccated coconut
25 g walnuts } chopped
walnut pieces } for decoration

Icing

4 tbsp butter }softened
50 g full fat soft cheese
60 g icing sugar }sieved
1 tsp lemon juice

Method

Ligthly grease a 20 cm/8 in square cake tin and line with baking paper

Sieve the flour, salt and ground cinnamon into a large bowl and stir in the brown sugar
Add the eggs and oil to the dry ingredients and mix well

Stir in the grated carrot, desicated coconut and chopped walnuts

Pour the mixture into the prepared tin and bake in preheated oven 180'C/350'F/Gas Mark 4 for 20-25 minutes or until just firm to the touch. leave to cool in the tin

Meanwhile make the icing in a bowl, beat together the butter, full fat soft cheese, icing sugar and lemon juice until the mixture is fluffy and creamy

Turn the cake out of the tin, spread with the icing and cut into 12 bars or slices. Decorate with walnut pieces.

Peringatan: masa nak buat icing tu jangan terlebih pukul..nanti icing jadik cair..
