Bonita,

Ni resipi yang I guna, dari H.E.B (HEB ni macam chain supermarket kat tempat I). For frosting, bagi I kalau ikut resipi depa manis sangat, so kurangkan half je sugar for icing tu.  Kek ni sedap makan lepas satu malam dalam peti ais

Carrot Cake

Ingredients:
4 Eggs
1-1/2 cups Vegetable Oil - (I kurangkan minyak to 1 cup je)
2 cups Sugar
2 cups Flour
1 tsp Salt
2 tsp Baking Soda
3 heaping cups Grated Carrots
1-1/2 cups Coarsely Chopped Pecans
2 tsp Vanilla Extract
1 sm can (8 oz.) Crushed Pineapple
1 tsp Cinnamon

Directions:
Heat oven to 350F (175 celcius?). Beat eggs & oil with mixer. Gradually add sugar. In a separate bowl, sift flour, salt, soda, and cinnamon. Combine the egg mixture with the flour mixture. Mix for 1 or 2 minutes. Stir in carrots, pecans, vanilla, and pineapple. Mix until blended. Bake in a greased and floured 9 by 13-inch pan for 50 to 55 minutes. Cool.

Frosting: Blend cream cheese and margaine with mixer. Add sugar, salt, and vanilla. Add chopped pecans. Mix until well blended. Frost cake and refrigerate.

Lagi satu bila it says 'CUP' bukan cup minum tea tu ye...cup ni means sukatan untuk bake, boleh beli kat bakery shop

Ni versi carrot cake recipe dari Internet, yang Hiro kurangkan vegetable oil. Takut tengok carrot cake guna minyak ...boleh replace with some apple sauce gak.

Kebiasaannya, kek yg ada perlu tambah soda bicarbonate ni jenis kek yg berat. Baking powder alone mungkin tak cukup nak naikkan kek tu. Ntahla.. dengar2 masa nonton rancangan SUGAR di AFC.

anyway, apple baru je siap buat kek carrot. yiehaaaa~~! smlm pg buat sebiji, pastu mlm td buat lg sebijik.

kalo kedua apple buat, apple kurangkan kandungan gula sbb agak manis jugakla kek ni..n also the cinnamon pun apple kurangkan sbb tak suka rasa cinnamon yg terlampau kuat tu..

anyway, apple guna recipe from joy of baking (eh btul ke apple sebut nih) huhuhuh..

mmg maerbeles! tak sangka apple bole buat carrot cake sendiri akhirnya..hehehehhe
hari ni nk bawak kek tu pergi open house umah pakcik. Nanti kalo sempat apple paste gambar, ye..

Kek Carrot

bahan2:
gula castor 1 cup
telur ayam 4 biji
walnut cincang 1 genggam
carrot parut sebatang besar
kalapa parut 3 sudu besar
kismis segenggam
tepung naik sendiri 2 1/2 cawan
serbuk cinnamon 1 sudu kecik
serbuk nutmeg 1 sudu kecik ( kalau tak da tak pa)
minyak masak 1 cup
soda bikarbonat 1 sudu kecik

topping: ( kalau nak letak topping la)
butter 1/2 buku
Philadelphia cheese 1 buku
gula icing
lemon juice  1 sudu

cara2:
pukul telur dan gula sampai kembang
masukan carrot, kelapa parut, walnut, kismis
masuk tepung dan soda bikarbonat
masuk serbuk cinnamon dan nutmeg
masuk minyak ..gaul hingga sebati..

bakar sehingga masak..kalau oven over panas nanti merekah..kena jaga suhu skit.

Topping pulak..
campur semua dah pukul hingga sebati..
