hi semua..haritu vann pergi kenduri umah kawan..ada tempura kat situ..sedap sgt2..vann pun tanyala resepi dia..balik2 rumah vann cubala buat..tp tak rangup mcm yg kawan buat..lps tu mcm serap minyak..kenapa ye?ada sesiapa tau?

Saya selalu buat tempura. Selalunya rangup. Saya guna tepung gandum & cornflour campur dgn air sejuk, putih telur & sedikit garam.

juga kepada peminat makanan jepun...jgn main lantak jer...

esp beli sushi yg siap mirin tuh

i think the crispiness terletak pd soda water...
believe it or not

yg part serap minyak tu...api kena besar tau.. hopefully bila masuk kuali, kejap je dah masak :lol

btol tu. biasa org masak tempura nih kejap je. masuk sekejap je dah masak. tapi gal tak penah buat. tgk org masak slalu la.

mak gal penah buat tp guna tepung segera yg dah ada semua bahan. cuma campur air sikit je, dah siap

ni dapat dari buku masak, tapi belum cuba lagi......

batter

1 egg, beaten lightly
2 cups (500ml) iced soda water
1 cup (150g) plain flour
1 cup (150g) cornflour

Combine egg in medium bowl with the water.  Add sifted flour all at once, mixing lightly until just combined, but still very lumpy.


Untuk goreng

Heat oil to moderately hot.  Deep fry ingredients, in batches, until golden; drain on paper towel.  Only fry small amounts at a time and make sure enough time is allowed for oil to come back to correct temperature before adding next batch.

The batter is called tempura...macam indian, version diorang pakora   

tak semestinya guna udang...sayur pun boleh...tahu tempe orait gak

hmm.. sedapnya.. selalu buat pakai tepung tempura segera jer.. balik rumah campur air sejuk (air sejuk peti).. pastuh siapkan seafood or sayuran.. celup n goreng... makesure goreng dalam minyak byk dan api besar... gerenti crispy..

saya selalu goreng udang, sotong, cendawan n kadang2 cili besar merah or hijau pun saya goreng gak pakai tepung tempura... sedappp...

Thanks. Mirin tu memang tak guna. Selalunya makan tempura dgn kicap campur halia yg dihiris halus2. Memang yummy esp. utk minum ptg mcm ni.

ABTW, cendawan yg selalu jual kat wet market tu & supermarket pun sedap buat tempura. Rasa dia lagi sedap dr. ayam. Cewahhh........... First time makan masa dinner dgn kawan2 kat sebuah restoren. Sos dia sedap tapi tak reti nak buat.

nak tanya satu soalan pasal tempura jugak ni..

kenapa saya buat tempura sotong selalu tak menjadik..dah la tu..asyik meletup2 je kejenya dlm kuali..tension.Masa saya gi makan sotong celup tepung kat Telok Tempoyak,Penang..rangup dan sekeping2 je sotongnya, takde pun rupa kembar siam macam yg selalu saya buat..sesiapa  boleh jawab soklan ni.silakan...makaseh

My response:-

Dulu ada iron chef bagi tips agar sotong tak meletup2 dlm kuali semasa digoreng. Kulit sotong hendaklah dibuang terlebih dulu. Lepas tu barulah digoreng dgn tempura & insyaAllah tak meletup2.

Tips saya pulak - selepas sotong dibersihkan, saya goreng sotong dgn minyak yg sedikit dlm kuali & biarkan air sotong tu keluar. Lepas tu baru dicelup dgn tempura & goreng. So far so good. Tak ada pun meletup2. Selamat mencuba.
