kak2 chef sekelian...takde update ke thread ni
adik2 yg baru mengenal dapur macam saya ni masih tak kenai banyak bahan masakan

Kalau sesiapa ada gambar bhn seperti dibwh sudi2kanlah tepek gambar disini tq

MENGAPA CREAM OF TARTAR TAK HALAL?

Saya ada terbaca tentang cream of tartar di yahoo. Saya ada resepi kek kukus yang menggunakan cream of tartar. Boleh tak kalau saya tak menggunakan bahan itu untuk membuat kek kukus. Apa akan terjadi pada kek saya jika buat begitu. Atau perlukah digantikan dengan agen yang lain sebabnya setahu saya cream of tartar tak halal ?


Jawapan : Cuba gantikan dengan soda bikarbonat dan sedikit garam, insyaAllah sesuai untuk kek kukus itu. Kek Kukus selalu tidak mengembang sebagaimana kek biasa yg dibakar di dalam oven, jadi, kek anda tetap seperti biasa (hanya kembang sedikit saja). Cream of tartar adalah 'deposit' yg tinggal di sekeliling bekas memeram wain, jadi ia tidak halal. Jika ia diperlukan utk mengentalkan putih telur, campurkan juga sedikit garam kerana ini juga akan membantu bila memukul putih telur (meringue).

jap ada satu persoalan :hmm:... cream of tartar ni bukan wine (bukan alkohol) lagi pun ianya dlm btk serbuk andai kata sebelum ni ianya mengandungi alkohol masa proses pengeringan utk jdikan serbuk dah tentu alkohol dah terbebas ke udara sbb alkohol kadar pemeruapannya tinggi..kita tak boleh minum wine sbb mengandungi alkohol sama gak cam tapai kalau airnya dah berbuih tapai tersbt dah berubah jd arak sbb mengandungi alkohol..masa peringkat ni tapai tu dah tak boleh di makan..

any idea...sapa2 ada info lagi pasal cream of tartar boleh tepek disini...macih...

Preparation:
Use 1/4 tsp. per 4 egg whites. Add to egg whites during the beating process. To make baking powder, combine 2 tsp. Cream of Tartar, 1 tsp. baking soda and 1 tsp Cornstarch and mix well.

entahlah kak noor saya pun dah confuse.....tp terpulanglah pada mana2 individu kalu rasa boleh guna...guna jerlah...tp kalu rasa cam was-was baik pk 2 kali.........tp kat portal Jakim....baking powder dia tulis HALAL......

ok ni ada artikel dari website indon republika online;

Bahan ini dibuat secara sintetis kimia dan tak ada masalah dengan status kehalalannya. Ada bahan pengembang jenis lainnya yaitu baking powder yang merupakan campuran antara baking soda dengan asam pengembang. Bahan yang bisa untuk asam pengembang adalah garam fosfat, sodium alumunium fosfat, glukono delta lakton dan cream of tartar.

Dari semua bahan di atas yang tak boleh digunakan adalah cream of tartar sebab ia merupakan garam potasium dari asam tartarat yang didapatkan dari hasil samping industri wine. Ini makanya bahan ini tak boleh digunakan oleh umat Islam. Meski pada kenyataannya bahan ini sering dimasukkan dalam resep pembuatan kue.

Statuts : Halal, if it is not obtained from wine by-product, in USA it is Halal because it is obtained from un-fermented grapes.

ARE CREAM OF TARTAR AND TARTARIC ACID HALAL?

Tartaric Acid is an acidulant that occurs naturally in grapes. It is used in grape and lime flavored beverages and grape flavored jellies. It is used as an acidulant in baking powder.

Cream of Tatar is the acid potassium salt of Tartaric acid. It is used as a chemical leavening to release carbon dioxide, which produces loaf volume in bake products.

Tartaric acid and Cream of Tartar in USA is made from unfermented crushed grapes according to Tartaric Acid manufacturer. So both are Halal since it is made from unfermented crushed grape.

But in other countries like South Africa the tartaric acid is made from the deposits left over on wooden barrels after wine making. These deposits are washed before making the tartaric acid. In that case Halal status of Tartaric acid is questionable and has to be decided by the Islamic scholars.

speed..kek oren chiffon tu mmg sedap..akak yg first time buat pun terus jadi...gebu segebu gebu nya..segebu kek chiffon yg beli dikedai..akak bake dlm dua bekas satu bekas berlubang cam gambo tu satu lagi acuan kek biasa..dua2 jadi dgn elok

nanti akak tepek link resepinya di thread kek chiffon :cak:

Bukan apa, ni pengalaman sendiri masa baru mula2dtg sini..kat M'sia tak ambil tau pasai rempah ratus ni semua dan tak berapa tau namanya:stp:..bila mai sini baru terkehel2 nak cari mana satu rempah..dahlah nama dlm bahasa Ing. aduh tensen!tensen!:geram:


dari kanan:-
halba campur,ketumbar (coriander), biji sawi(mustard seeds),jintan putih (cumin), jintan manis (fennel)




dr kanan:-
halba (fenugreek), lada hitam(black pepper), poppy seeds (kas-kas):diarg penang mesti ada ni utk buat karimasala, barli, biji selasih (tukimura seeds)
