Healthy Recipe - Low-fat creamy chicken pasta

Ingredients:
  • 375g dried spaghetti pasta
  • 1 tablespoon olive oil
  • 2 (500g) chicken breast fillets (Use skinless chicken breast fillets.)
  • 1 large brown onion, finely chopped
  • 2 garlic cloves, thinly sliced
  • 250g cherry tomatoes
  • 375ml can Carnation Light & Creamy Evaporated Milk
  • 2 teaspoons fresh thyme leaves
  • 2 tablespoons chopped fresh chives
  • 100g baby spinach
  • 1/2 cup finely grated parmesan cheese

Methods:
Step 1 :
Cook spaghetti in a large saucepan of boiling water, following packet directions, until tender. Drain. Return to pan. Cover to keep warm.
Step 2:
Meanwhile, heat half the oil in a large frying pan over medium-high heat. Cook chicken for 5 to 7 minutes each side or until browned and cooked through. Transfer to a board. Thinly slice. Cover to keep warm.
Step 3:
Heat remaining oil in pan over medium heat. Add onion and garlic. Cook, stirring, for 3 minutes or until onion has softened. Add tomatoes. Cook for 2 minutes or until tomatoes have just softened. Add evaporated milk, thyme and chives. Season with pepper. Bring to the boil. Remove from heat. Add chicken, spinach and milk mixture to pasta. Toss to combine. Top with parmesan. Serve.

Great recipe!
You should try my favorite pasta recipe too.
Ingredients (for 6 servings)
    Wild garlic (50 g) - 3 bunches
    3 Organic lemons
    360g Smoked bacon (mixed (in 1/2 cm thick slices))
    750 g Pasta (long (e.g. Bavette))
    salt
    oil
    360ml of Whipped cream
    6 Eggs (class M)
    75g Parmesan (freshly grated)
    pepper (black)

    Wash wild garlic and spin dry.
    Cut the leaves across into finger-width strips up to the base of the stalk.
    Wash the lemon with hot water and, best of all, peel off the peel in short strips with a zest zipper.
    Squeeze out 2 tablespoons of lemon juice.
    Cut the bacon crosswise into 1⁄2 cm thick strips.
    Cook the pasta in plenty of boiling salted water according to the instructions on the packet.
    Meanwhile, heat the oil in a coated pan.
    Fry the bacon in it over medium heat for 5 minutes.
    Stir in the lemon peel and wild garlic and remove the pan from the hob.
    Whisk the cream, eggs, and Parmesan together.
    Drain the pasta, let it drain briefly, and return it to the hot pot.
    Carefully stir in the cheese cream.
    Mix in the lemon juice while stirring.
    Add bacon and wild garlic mixture and sprinkle with coarse pepper.

TIP
If you don't have a zest, peel the lemon peel thinly with a peeler and cut it into short strips.
