When most kids open their lunch, they'll see food that looks like food. When Beau Coffron's first-grade daughter, Abby, opens hers, she sees food that looks like art. "I thought it would be a great way to show my daughter that I love her and miss while she was in school," dad told The Huffington Post in an email. Every Sunday night, the father of three gets to work cutting, slicing and organizing food based on Abby's favorite shows and interests. Just recently, the two finished reading The Chronicles Of Narnia, which sparked his lunch tribute to The Lion, The Witch and The Wardrobe.  Lunchbox Dad said that making elaborate lunches has brought him closer to his daughter. "Not only did I start paying more attention to what she was watching, and playing with, but we also are able to talk more about her interests," he said. Abby's younger siblings aren't in school yet, but Coffron said he does make his 3-year-old special lunches once in awhile. It looks like a lot of work, but Beau considers lunchbox art a fun pastime to share with others. "Some parents watch TV, some go to the gym, some snowboard. I do this," he said.
