One of my favourite food. Tak sure dalam kategori apa cendawan ni ...sayur ke? whatever it is ... memang suka sangat ngan cendawan .. cendawan butang, cendawan tiram (Oyster Mushroom), kulat yang banyak kat estet getah .. anything about mushrooms.
some of dead mushroom's song pun aku suka gak! ahakkssss .. opsss dah lari sikit topik .. but still ada kena mengena ngan cendawan.

My all time favourite mushroom recipe ... simple sangat, pembuka selera. Sedap kalau gandingkan dengan apa2 masakan jenis sambal .. sambal belacan ke, sambal tumis ke etc ...
Sup Cendawan Tiram
Air (satu cawan)
Bawang Putih (seulas)
Bawang Merah (seulas)
Daun Kunyit sehelai @ Serai sebatang
Cendawan Tiram (sepeket ... dikoyak2)
Garam
Cara:
1) Masukkan air, daun kunyit/serai, hirisan bawang putih dan merah dalam periuk. Masak sampai mendidih.
2) Masukkan cendawan, garam secukup rasa ... siap!!

Mushrooms... in a class of their own
Though mushrooms are often grouped with vegetables and fruits, they are actually fungi--for that reason, they are in a class of their own, nutritionally speaking. Mushrooms do share some of the benefits of fruits and vegetables. They are low in calories, have no cholesterol and are virtually free of fat and sodium. And that’s not all.
Mushrooms stand alone when it comes to some of the essential minerals and B-complex vitamins not easily found in produce. In addition, some contain substances that might prove to be useful in the treatment and prevention of serious diseases.
Selenium, an essential mineral, works closely with Vitamin E to produce antioxidants that neutralize the cell-damaging “free radicals” that can increase the risk of cancer and other diseases of aging. It plays an important role in the immune system, the thyroid system and the male reproductive system.
Potassium is a mineral your body just can’t do without. It helps maintain normal heart rhythm, fluid balance, muscle and nerve function. The U.S. Food and Drug Administration recently gave a nod to its disease-fighting capability by stating: “Diets containing foods that are good sources of potassium and low in sodium may reduce the risk of high blood pressure and stroke.” Some mushrooms supply more potassium than foods better known as sources for this mineral. A serving of white mushrooms has more potassium than an orange or a tomato. A portabella mushroom has more than a glass of orange juice.
Copper is another essential mineral and mushrooms are a good source. We’re all aware of iron’s role in making red blood cells and delivering oxygen to every part of the body. But did you know that iron can’t do its job without copper? |

Mushroom and cancer researh
In the United States, researchers are just beginning to take a serious look at the disease fighting potential of mushrooms. At the Beckman Research Institute of the City of Hope in California, preliminary studies suggest that white mushrooms may play a role in treating or reducing the risk of breast cancer in post-menopausal women.
A substance in white mushrooms was found to suppress breast cell proliferation by reducing the level of estrogen, a recognized factor in breast cancer development. The substance, yet to be identified, appears to inhibit the activity of aromatase, an enzyme involved in estrogen production.
Some early trials have also been published on mushrooms and prostate cancer risk reduction. A recent study at New York Medical College showed that maitake D-fraction destroyed prostate cancer cells in the test-tube.9 At the University of California at Davis, scientists are investigating the therapeutic effects of shiitake extracts on prostate cancer patients. |

Sawi bersama Cendawan dan Lobak
Bahan-bahan
200g sawi
100g lobak merah (dihiris serong)
1/2 cawan cendawan tiram yang jenis kecil - jangan dipotong
2 ulas bawang putih (dihiris)
3 biji bawang kecil (dihiris)
1/2 inci keping halia (dihiris halus)
1 sudu makan kicap cair
sedikit serbuk lada putih
1 sudu makan minyak makan
1 sudu makan minyak bijan
Cara-cara
1) Panaskan minyak makan bersama minyak bijan. Masukkan bawang putih, bawang kecil, halia.
2) Bila dah wangi, masukkan lobak dan cendawan.
3) Masak beberapa minit lagi, campur pula kicap cair, serbuk lada putih.
4) Masukkan sawi, kacau biar cepat-cepat. Dah siap! |

Mushroom Cheese Omelette
Bahan-bahan
4 biji telur
cheddar shredded Cheese
button mushroom (dalam tin pun boleh .. dapat yang fresh lagi sedap)
black pepper powder
1 susu makan susu cair
Cara-cara
1) Potong button mushroom - sederhana tebal.
2) Pecahkan telur, campur sedikit susu cair atau susu segar.
3) Kacau rata (macam telur dadar).
4) Panaskan kuali (letak minyak sedikit sahaja tapi rata satu kuali).
5) Dah panas, goreng mushroom then masukkan telur. Jangan api besar.Jangan terbalikan telur. Apabila agak garing bahagian bawah, dan bahagian atas dah kering, taburkan shredded cheese atas telur, lipat dua.
6) Taburkan black pepper atasnya - kalau tak suka tak payah letak.

300gm brokoli
200gm cendawan tiram
150gm cendawan butang

Masak Lemak Kulat Sisir
Bahan-bahan:
2 cawan santan daripada sebiji kelapa
200g kulat sisir (kat pasar tani mudah nak dapat)
Ikan bilis (dalam segenggam)
Serai (sebatang, dititik)
Bahan kisar:
100g bawang kecil
5g bawang putih
20g cili padi
10g halia
20g cili merah
10g kunyit hidup
Cara-cara:
1) Masukkan santan ke dalam periuk.
2) Masukkan bahan kisar, serai, ikan bilis dan kacau rata di atas api sederhana.
3) Masukkan kulat sisir, kacau rata dan biarkan mendidih. bila dah masak, angkat dan hidangkan.
Petua nak basuh kulat sisir:
Kulat ni memang selalunya banyak pasir dan benda2 kotor. Rendamkan kulat ni dalam air ... biar banyak air dalam bekas tu. rendam dalam 30min ke 1 jam. segala pasir, kekotoran akan jatuh ke bawah bekas rendaman. pastu bilas bersih-berish sebelum masak.

apa kata ninoz kongsi sama resipi rendang cendawan busut/sisir tu? goreng lada hitam tu macam power je ... leh kongsi tak? paja ni apa-apa resipi yang ada lada hitam memang suka ler sesangat.
mak paja dulu rajin buat .. memang sedap ... kalah rendang daging. lagi kering lagi sedap. kalau campur kerang pun power.
ni resipi rendang kulat sisir yang mak paja punya. bahan dia simple jer .. tak terlalu banyak rempah ratus.
Rendang Cendawan sisir & kerang
Bahan-bahan:
Santan (sebiji)
Cili padi @ kering (sesuka hati .. nak pedas lebihkan cili)
halia (sebesar ibu jari)
lengkuas (dalam 1cm)
bawang putih (6 ulas)
bawang merah (8 ulas)
kunyit (1cm)
serai (3 @ 4 batang)
cendawan sisir (dalam 2 genggam)
kerang (dalam 1/2 kilo, rebus dan kopek isinya)
Kerisik (1/2 biji kelapa)
Daun Kunyit (sehelai, hiris halus)
Garam
Asam Gelugor
Cara-cara:
1) Kisar cili, halia, lengkuas, bawang putih & merah, kunyit, serai.
2) Masukkan dalam kuali ... tambah santan. Masak ngan api sederhana.
3) Biar menggelegak dan agak pekat santannya. Masukkan asam gelugor.
4) Masukkan cendawan sisir dan kerang. Masak sampai hampir kering
5) Masukkan garam secukup rasa, kerisik.
6) Bila dah hampir kering tu, masukkan hirisan daun kunyit.
Rendang ni makan ngan roti sedap gak.

tumis bawang putih / merah ngan cili padi, buh udang halus tu sikit masukkan cendawan. Jgn lupa garan sikit ler So simple .... yet so sedap. Kalau tak nak pedas buh cili merah jer. |

errrrrrrrr tapi dewi tak guna cendawan tiram goreng cam nie ... dewi guna cendawan kulat tu.. ala yg kecik2 tu ler yg org kutip kat kebun getah tu.
kalau cendawan tiram tu ... mak dewi buat gak goreng kadang tu... tumis bawang putih , merah ngan cili padi, peh tu buh sos tiram buh air sikit sebab cendawan tiram ni lama gak nak layur kang kering sgt lak... peh tu buh cendawan tiram. ( taj perlu garam sebab sos tiram dah masin) |
